As far as wisdom teeth, you'll be prescribed Tylenol 3s which contain Codeine. These will keep the pain minimized and make you sleep and more or less numb. My advice: go buy a bunch of movies or video games and just chill for however long your recovery period is. You can't really eat much (but trust me you won't want to). The worst part is changing the gauze in your mouth used to help control the bleeding.
Tonsils I'm less familiar with, but the process won't hurt. Again it is more the recovery period that is painful. You're advised to eat ice cream and other chilled foods to help the swelling and soreness of your throat.
Overall the operations are pretty minor and the overall discomfort is minimal.
